These bites are scrumptious! The scrumptiousness comes from the buttery shortcrust pastry dough. This type of pastry dough is usually for making quiche, sweet and savoury tarts, or even pies. Ingredients
- 1 32 cm round shortcrust pastry dough
- 1/2 cup shredded mozzarella
- 1/2 cup shredded gruyere
- 3/4 cup frozen spinach thawed & drained
- 1/2 tsp garlic powder
- 1 egg
- Salt
Instructions
- Flour the surface.
- Lay out shortcrust pastry dough.
- Beat egg.
- Lightly brush pastry dough with eggwash.
- Spread mozzarella evenly.
- Then, gruyere cheese.
- Add 1/2 tsp garlic powder and salt to thawed and drained frozen spinach. Mix.
- Spread seasoned spinach evenly on top of the cheese.
- Roll pastry dough firmly but gentle.
- Cut dough about an inch thick.
- Re-shape dough with your hands to have nice round even appearance.
- Arrange on baking sheet giving enough space in between.
- Lightly brush top and sides with beaten egg.
- Bake at pre-heated oven 200 C (400F) for 18-20 minutes.

Notes
TIPS 1. Thaw frozen spinach ahead of time. 2. Work on chilled pastry dough for easy shaping and cutting. 3. To get thicker hearty egg wash, do not add water. 4. Always pre-heat oven before baking.
