  • 1 32 cm round shortcrust pastry dough
  • 1/2 cup shredded mozzarella
  • 1/2 cup shredded gruyere
  • 3/4 cup frozen spinach thawed & drained
  • 1/2 tsp garlic powder
  • 1 egg
  • Salt


  • Flour the surface.
  • Lay out shortcrust pastry dough.
  • Beat egg.
  • Lightly brush pastry dough with eggwash.
  • Spread mozzarella evenly.
  • Then, gruyere cheese.
  • Add 1/2 tsp garlic powder and salt to thawed and drained frozen spinach. Mix.
  • Spread seasoned spinach evenly on top of the cheese.
  • Roll pastry dough firmly but gentle.
  • Cut dough about an inch thick.
  • Re-shape dough with your hands to have nice round even appearance.
  • Arrange on baking sheet giving enough space in between.
  • Lightly brush top and sides with beaten egg.
  • Bake at pre-heated oven 200 C (400F) for 18-20 minutes.

2. Work on chilled pastry dough for easy shaping and cutting. 
3. To get thicker hearty egg wash, do not add water.
