Ingredients
- 6 large rice papers
- regular olive oil 1/4 inch high in the frying pan
- spanish paprika
- spicy paprika
Instructions
- Using a pair of scissors, knife, or your hands. Cut rice paper in four ways.
- Fill a non-stick frying pan with some olive oil about 1/4 inch high.
- Once pan is hot, gently drop one rice paper at a time.
- Rice paper should cook instantly blossoming like a white flower.
- Quickly flip rice chips on the other side and lift to drain excess oil.
- Transfer chips onto a plate with paper towel to absorb more of the excess oil.
- Assemble rice chips and flavor with paprika one by one.
- Serve immediately.
Notes
Tips:
- Spend extra money on your rice paper. Get the best quality available in your area.
- Use regular olive oil for frying. Note: Avoid using extra virgin olive oil for frying because it has low smoke point which is not ideal for frying.
- Sometimes you'll get tiny breakage when cutting rice paper. Do not throw away these tiny pieces. You can also fry it.
- Make sure the oil is hot when frying.
- Don't let chips turn brown. It should be white in color.
- Use paper towel to absorb excess oil.
- These chips are so delicate that I recommend flavoring them one by one. If you're going for a different flavor other than paprika, make your seasoning ahead of time.
