Chicken Spinach Meatballs with Creamy Sauce

Get your warm rice or crispy sweet potato fries ready because your new favorite chicken dish is here! These chicken meatballs with creamy sauce recipe are so flavorful! I used beef broth instead of chicken and the result is amazing! So, keep in mind, when cooking chicken, it doesn’t mean you have to use chicken broth. Beef says what a wonderful idea!

Pairing these meatballs with warm rice sounds pretty straight forward. Well, what about the crispy sweet potato fries, where did you get that idea? You ask. This blazing idea came from a Canadian specialty called Poutine. Four years ago, I had my first taste of poutine in Quebec. The delicacy of french fries swimming in brown gravy and topped with soft cheese curds is a must when visiting Canada. So, are you team rice or team poutine?

Equipment

  • food processor

Ingredients

  • 1/2 lb ground chicken
  • 1 medium onion
  • 2 fresh chili pepper with creamy feta or red bell pepper
  • 1 egg
  • fresh parsley
  • pink salt
  • 2 cups baby spinach
  • cooking olive oil

Creamy Sauce

  • 2 tbsp butter
  • 2 tbsp mascarpone or cream cheese
  • 1/4 cup beef broth or chicken broth
  • 1 tbsp gluten free flour or regular flour
  • sprinkles brown sugar
  • a little bit water
  • smoked paprika

Instructions

  • Read helpful tips below.
  • In a food processor, put ground chicken, onion, egg, chili, parsley, spinach, and salt.
  • Press pulse until well combined.
  • Put flour on a plate.
  • Scoop about a tbsp of ground chicken.
  • Gently roll on flour and shape it into balls.
  • In a frying pan, add olive oil.
  • Cook meatballs on both sides.
  • Set aside.
  • Using the same pan, add butter.
  • Once butter is melted, add mascarpone.
  • Stir.
  • Add beef broth.
  • Stir.
  • Add flour of choice.
  • Stir.
  • Sprinkle some paprika.
  • Add a little bit of water until the desired consistency is achieved.
  • Stir.
  • Put meatballs back in the pan and cover with sauce.
  • Once it starts bubbling, sprinkle top with some sugar.
  • Cover. Cook for for 5-10 minutes.
  • Check meatballs for doneness.
  • Garnish with freshly chopped parsley.
  • Serve with warm rice or crispy sweet potato fries.

Notes

TIPS:
  • Feel free to substitute ingredients. Remember: YOU ARE THE BOSS! 
  • Make sure chicken meatballs are cooked all the way before serving. 
  • Add water little by little so you can control the consistency of the sauce. 
  • I used gluten free flour but regular flour is also fine. 
  • Please try using beef broth first. It is more tasty! I promise!
  • Always TASTE TEST your dish. 
  • Serve with warm rice or crispy sweet potato fries!
