Carroodles with Pad Thai Sauce

I love love the classic pad thai and all the aromatics that comes with it. So, I decided to re-create a noodle-free version! That’s how I found out about carroodles. Carroodles is just another name for carrot noodles. It is made by using a vegetable peeler, peeling along the length of the carrot to make a noodle effect. For this recipe, I didn’t use tamarind or fish sauce the main ingredients of the traditional pad thai. Instead, I came up with something special that will go really well with the carroodles. I was amazed how a vegetable can easily turn into a fettucine-like noodles and taste that good! It’s fun to make and it extremely satisfying. Hands down this is the best healthy caroodle pad thai you can ever make right at your home.

Pad Thai Sauce

  • 2 Tbsp Soy Sauce
  • 8-10 drops Rice Vinegar
  • 1 Tsp. Honey
  • 1 Tsp. Sambal Oelek Indonesian Chili Sauce or try the Chili Sauce you have
  • 1/2 Lemon Juice
  • Salt

Meat & Noodles

  • 1 Tbsp. Olive Oil
  • 3 Garlic Cloves
  • 1 Small Onion
  • Spring Onion
  • 2 Long Carrots
  • 6 oz. Turkey Meat
  • Salt & Pepper
  • 2 Eggs


  • 2 Tbsp. Crushed Peanuts
  • Lemon Wedge
  • Fresh Spring Onions


  • Start making sauce by combining soy sauce, rice vinegar, honey, sambal oelek, lemon juice, and salt in a small bowl. Mix well.
  • Set aside.
  • Mince garlic cloves.
  • Dice onion.
  • Chop spring onion.
  • Peel skin of carrots.
  • Peel along the length of carrot to create a ribbon.
  • Slice turkey meat thinly.
  • Heat pan on medium heat.
  • Saute onion and garlic.
  • Add meat and season with salt and pepper.
  • Add 2 Tbsp. of sauce and handful of chopped spring onions.
  • Add carrot noodles.
  • Add remaining sauce.
  • Gently push carrot noodles on one side to make room for eggs.
  • In a small bowl, beat 2 eggs. Then, add into pan next to the carrot noodles.
  • Cook eggs for a few minutes.
  • Add chopped spring onions.
  • Gently mix everything together.
  • Garnish with crushed peanuts, chopped spring onions, and a lemon wedge.


1. Choose long and fat carrots to get the best noodle effect. 
2. Chicken or shrimp are great substitutes for turkey. 
3. Don't overcook carrots. Check it after mixing all ingredients together.
