This is the proof that Olive Oil is great in baking especially when you’re making the best Banana Olive Oil Cake Ever! Usually this cake is made with citrus fruits like lemon but today we’re going to do something different, we’re going to use bananas! Yes bananas! It’s so good! You’re going to love it!

Banana Olive Oil Cake

Olive oil cake with banana and orange zest. The result is simply spectacular!

Ingredients

  • 3 medium ripe bananas
  • 1/2 cup regular olive oil
  • 3 medium eggs
  • 1 Tbsp. honey
  • 2/3 cup sugar
  • 1 1/4 cup all purpose flour
  • 1 tsp baking powder
  • a pinch of salt
  • 1 tsp vanilla extract
  • 1 tsp orange extract

Instructions

  • Peel and mash bananas until a baby food consistency is achieved.
  • In a separate bowl, crack eggs and beat them.
  • Add sugar, orange extract, mashed bananas, olive oil, and honey. Mix.
  • Combine flour and baking powder.
  • Add flour mixture into wet ingredients in increments.
  • Add salt and vanilla extract. Stir one more time.
  • Pour batter in medium loaf pan lined with parchment paper.
  • Bake in a pre-heated oven at 350 F (175 C) for 30 minutes.
  • Lower temperature to 300 F (150 C) and bake for another 15-20 minutes.
  • Check if cake is done by inserting a toothpick. If it comes out clean, it's done.
  • Remove cake from loaf pan and let it cool down completely.
  • Enjoy!

Notes

TIPS 
1. Use regular olive oil. It's quite resistant to heat compared to EVOO (Extra Virgin Olive Oil). The cake will also taste better.
2. Add flour in increments. So, you don't have to mix very long for the batter to come together. 
3. Use parchment paper to avoid cake from sticking to the loaf pan. 
4. I used a medium loaf pan ( 27cm long). So, consider using around that size (25-30cm).
